Off the Southeast coast of Barbados lays a secluded beach known as Ginger Bay. It’s the perfect setting for couples looking for a romantic escape. The beach gets few visitors so explore hidden caves at your leisure and expect to be surrounded only by swaying palms. Make sure to pack a lunch including some of these Cabana Boys, as there are no amenities or services provided.
½ cup (1 stick) unsalted butter, at room temperature
½ cup sugar
½ cup molasses
1 large egg yolk
2 cups all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cloves
½ teaspoon ground nutmeg
Royal Icing
1 pound powdered sugar, sifted
3 tablespoons meringue powder
6 tablespoons cold water
1 Preheat oven to 350 degrees. Line several cookie trays with parchment paper.
2 In a mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy, about 2 minutes. Beat in molasses and egg yolk for 1 minute. Add flour, salt, baking powder, baking soda, and spices and mix until combined. Wrap dough and chill for at least 1 hour in refrigerator.
3 On a lightly floured surface, roll the dough out to ¼-inch thickness. Cut into desired shapes with cookie cutters. Place cookies at least 1 inch apart on prepared trays.
4 Bake 8 to 10 minutes, or until cookies puff and edges are lightly browned. Remove from oven and let cookies completely on tray. Frost with Royal Icing when cool.
5 Make the icing: Combine the powdered sugar and meringue powder in a mixer fitted with the whip attachment. With the mixer on low speed, slowly drizzle in the cold water. Beat on medium speed for 2 minutes. Add more water if needed. Use immediately.
